This is a delicious recipe. You can double or even triple the recipe depending on how many people you plan to feed.
Ingredients:
1 skinless and boneless chicken breast
1/2 green bell pepper
1/2 yellow bell pepper
1/2 red onion
(I also like to use mushrooms)
Marinade:
1 1/2 tbsp. olive oil
1 1/2 tbsp. lemon juice
1/2 - 1 tsp. paprika (if you like spicy, use 1 teaspoon)
1/2 tsp. chili flakes
1/2 tsp. ground cumin
1/4 of one small onion
2 cloves garlic
1/4 tsp. salt
1 tbsp. chopped fresh parsley or dried parsley
For Grilling:
2 tbsp. olive oil for brushing
Method:
Cut chicken into small cubes (a total of 16 pieces), pat dry and marinate with the ingredients for 1 hour.
Thread 4 pieces of chicken meat with two pieces each of green and yellow bell pepper and onion onto a metal or bamboo skewer. Repeat.
While grilling, brush the kebabs with olive oil.
Note:
If using bamboo skewers, soak them in cold water overnight so they don't get burned during the grilling process.

I do like it with Old Bay Seasoning. Now, that makes me want a low country boil. Yummy!
