POPPY SEED CHICKEN
4 chicken breasts, skinless and boneless
1 16 oz container sour cream
1 can cream of chicken soup
1 can cream of mushroom soup or cream of celery soup
1 stick snack crackers, crushed
2 tsp poppy seed
1/2 cup butter, melted
Precook chicken breasts in boiling water until thoroughly cooked. Remove breasts from water and let cool (save the broth for other things!)
Tear cooled breasts into bite sized pieces, and put in bottom of casserole dish.
Mix together sour cream, cream of chicken soup and cream of mushroom (or cream of celery) soup and spread on top of chicken. Cover with crushed snack crackers. Sprinkle poppy seed on top. Drizzle melted butter on top.
Place in preheated 350°F oven until warmed through, about 20-25 minutes.

INGREDIENTS:
3 avocados - peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)
DIRECTIONS:
1. In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor, or serve immediately.
Tips of Peeling & Pitting an avocado!
When you purchase your avocados get them either ripe, with some give to the touch, or get them still firm, a few days ahead of when they are needed, and put them in a brown paper bag to ripen.
How to Cut and Peel an Avocado
1 Grip the avocado gently on one side with one hand. With a large, sharp knife in the other hand, cut the avocado lengthwise around the seed. Open the two halves to expose the pit.
2 For safety, fold up a kitchen towel and use that to hold the avocado half with the pit. Gently tap the pit with a knife with enough to wedge the knife into the pit, with the knife twist the pit out of the avocado and discard.
3 Scoop out the avocado flesh with a spoon.
