Use paper liners in muffin cups for easy clean-up.
If muffin cups are filled more than 3/4 full the muffins will have flat, “flying saucer” tops. If sufficient room is not allowed for muffins to expand before reaching the top of the cup the muffin will flatten on top.
If some muffin cups will remain empty during baking, put 2 to 3 tablespoons water in the unused muffin cups to keep the pan from warping.
If baked muffins stick to the bottom of the muffin cup, place hot muffin pan on a wet towel for about two minutes.
2 cups all-purpose flour
3/4 cup granulated sugar
1 tablespoon poppy seeds
1 tablespoon baking powder
1/4 teaspoon salt
1 cup milk
1/4 cup (1/2 stick) butter, melted
1 egg, slightly beaten
1/2 cup Dried Cherries (beside the craisins in Ingles)
3 tablespoons grated orange peel
Combine flour, sugar, poppy seeds, baking powder and salt in a large mixing bowl. Add milk, melted butter and egg, stirring just until dry ingredients are moistened. Gently stir in Dried Cherries and orange peel. Fill paper-lined muffins cups 3/4 full.
Bake in a preheated 400° oven 18 to 22 minutes, or until wooden stick comes out clean. Let cool in pan 5 minutes. Remove from pan and serve warm or let cool completely.
Makes 12 muffins.
Muffin Tips:
I think the best tips for people to consider when making muffins is not to OVER MIX the batter. This makes the muffins come out tough and not cake like.
For rounded tops on muffins grease only the bottom of the cup and halfway up the side of the cup.
