North Carolina barbecue is one of the most famous and beloved regional cuisines in all the fifty states. NC BBQ, as locals call it, cooks pig meat at quite low temperatures for up to 18 hours at a time.
And since BBQ & Blues is upon us, I thought it would be a good time to get everyone started!

























Everyone around there knows that the best BBQ was made by my late grandfather, A.M. Russell, Sr. accompanied by the best brunswick stew made by my grandmother, Bertha Russell.
I have lived here in N.C. for almost 13 yrs. and still haven't gotten used to the vinegar based sauce that is popular here on the coast, or the mustard based sauce that is popular west of I-95. As far as I am concerned, it all stinks compared to the good ole' Ga. sweet and tangy red based sauce!
